Soy Lecithin is a yellow fatty substance mainly composed of Choline, Glycerol, Fatty Acids and Phospholipids.
Soy Lecithin can be obtained by cleaning and cracking the soybeans into small pieces, separating the hulls from the cracked beans.
Next, the soybean pieces are pressed into flakes and the oil is extracted yielding a mix of Lecithin and Soybean oil.
This mix is heated and Lecithin is separated from the oil by the addition of water, which causes Lecithin to become inflated, hollow and stay puffy.
Then water is removed by steam separation, yielding Lecithin.
